Michael Balboni

Michael Balboni is the Chef and Co-Owner of Twist Catering. A graduate of the Culinary Institute of America, Michael began his career in New York City at Restaurant DANIEL, where he fell in love with the high intensity and controlled chaos of fine dining. Starting with humble tasks—peeling potatoes, shucking fava beans—he cooked his way through the brigade and was named Sous Chef by the age of 23.

After five years at DANIEL, he joined the opening team at L’Atelier de Joël Robuchon as Executive Sous Chef. Working under the legendary “Chef of the Century” instilled in him the leadership and discipline required to run a world-class kitchen. In 2020, Michael was appointed Executive Chef of Le Pavillon, Daniel Boulud’s landmark restaurant in One Vanderbilt. Under his direction, the restaurant earned four consecutive Michelin stars, solidifying his reputation as a standout chef in New York City’s culinary scene.

With Twist Catering, Michael brings his Michelin-level experience beyond the restaurant, crafting seasonal, French- and Italian-inspired menus that transform private events into unforgettable dining experiences.
